    I love lemons! I strongly believe everyone should have at least a few lemons in their kitchen at all times. They can magically transform a dish in seconds. Prompting you to exclaim, that’s what it needed!  Lemons should be part of everyone’s kitchen. I personally can’t live without them. They freshen, elevate, and bring sparkle to any dish.  Lemons can correct over salting. If you find you’ve added a bit too much salt, squeeze in some lemon juice. While they also have the ability to replace salt in your cooking, if you are trying to reduce your sodium. Just add a bit more lemon juice to a savoury dish and it will enhance the taste of your food.  I use them in sauces, dips, marinades, vinaigrettes, baking of all sorts and if I have left over, I’ll throw it in my water. Finally, the zest can be your secret weapon. Don’t forget to grate before you squeeze!   Lovely Lemon Marinade This quick sauce is great for marinating chicken, pork, and seafood. Chicken and Pork can sit over night with this marinade.  As for shellfish and seafood, I would advise to pour it on and leave to marinate for about 30 minutes before cooking.  Lemon juice has the tendency to cook protein, if left on for too long. Seafood is effected more so, as it is delicate.  Toss your potatoes in this sauce before you roast them. You’ll thank me later.  Any roasted vegetables, such as broccoli, cauliflower or asparagus, would love to be tossed in this before going into a hot oven. Drizzle over fresh grilled or steamed veggies.  And finally, use it as a vinaigrette for your salad. So many uses! I’m sure once you start experimenting, you too will find a great way to use this marinade.   Ingredients The zest and juice of 2 lemons 1 cup extra virgin olive oil 1 Tbsp. fresh rosemary, finely chopped (about 2 sprigs) 1 tsp fresh thyme, finely chopped (about 3 or 4 sprigs) ¼ cup of fresh Italian parsley, chopped (about half a bunch) 2 cloves garlic, grated 1 Tbsp. Dijon Mustard 1 Tbsp. honey – you can add a bit more to your liking 1 tsp. Worcestershire Sauce, for a little umami ½ tsp chili flakes 1 tsp salt 1 tsp pepper Toss all of the ingredients into a bowl and whisk together or you can certainly make the whole batch in a food processor. It will keep comfortably in the fridge for up to 10 days

  • Chef Mina’s January Feel Good Salad Recipe

    After a month of overindulging, most people love to start the New Year with a fresh outlook and most likely, a chance to cut back on the calories.  Some choose cleanses, some go carb free.  It seems we are all inundated with ways to improve our diet and start January off with a healthy bang.  I believe, come January, we all share the same need to make a positive change.  Whatever form that may come in, we all want to give it our best shot.  After the Holiday Season of freedom and permission to go a bit crazy with sugar, fat and carb, which was all worth it, now comes the time for self-care and thinking of ways to make your daily diet both healthy and yummy.  Here is a great salad idea that you can incorporate into your daily routine.  It’s great for lunch on its own or pair it for dinner with a lovely roast chicken or seared salmon.   Roasted Spiced Cauliflower and Endive Salad Ingredients Marinade For Cauliflower ½ cup Olive Oil 2 tsp. Cumin 1 tsp Turmeric 1 tsp. Coriander Juice and Zest of 1 Lemon 1 tsp. Salt ½ tsp  Pepper Yogurt Drizzle 1 cup Greek Yogurt ¼ cup Extra Virgin Olive Oil 1 Tbsp. Tahini ½ a bunch of Fresh mint, chopped 1 tsp Cumin 2 Garlic cloves, minced ½ tsp Coriander Juice and Zest of 1 Lemon ½ tsp Salt ½ tsp Pepper Cauliflower Preparation Preheat oven to 400 degrees. In a bowl, whisk together the cauliflower marinade.  Toss the cauliflower florets with the sauce, evenly coating all florets.  Place on a cookie sheet and bake for 30/40 minutes, until golden and slightly charred on the edges.  Cool to room temperature.   Yogurt Sauce I find the best way to make this sauce is to place all of the ingredients into a food processor and blitz until smooth.  You can certainly chop and mix everything together by hand.   To Assemble Prepare all herbs, green onions,  endives, and pumpkin seeds, in a large bowl.  Toss in cooled cauliflower florets and fold together.  Place mixture onto pf the spinach greens. As a final flourish, drizzle the yogurt sauce on top of your salad.  You can also have it in a bowl on the side, for a self-serve option. Full of goodness and so tasty!

  • Chef Mina’s Tasty Fall Soup

    Our days have become shorter and colder.  What better way to warm up than with a fast and easy soup, full of flavour and goodness.  This soup can be prepared within 45 minutes.  Or, simply make it on a Sunday and freeze portions for a rainy day.  I love to serve this soup with a dollop of yogurt and toasted pumpkin seeds.  Enjoy! Sweet Potato and Apple Soup Accented with Chipotle and Coconut Milk Ingredients 3 medium yams, peeled and roughly chopped 1 russet potato, peeled and roughly chopped 1 small to medium onion, roughly chopped 2 stocks of celery, roughly chopped 2 apples, gala-style, roughly chopped (you can leave the skin on) 3 cloves of garlic, minced 2 tsp. cumin 2 tsp. coriander 2 tsp. chilli powder ½ tsp. chipotle powder, or to taste – if you like it spicy, add more! Juice of 1 lemon 1 litre chicken or veg stock 1 can coconut milk   Method In a large pot, on medium, saute onions, celery, garlic and apples.  Sprinkle ½ a tsp. of salt and pepper.  Stir until soft, 10 minutes.  Add the spices and toast for a few minutes.  Add the stock and the chopped yams and potatoes.  Increase the heat and bring to a boil.  When the soup boils, bring it down to a simmer.  Cook for 40 minutes.  Lid is not required.   With an immersion blender or a stand up blender, puree the soup until smooth.  Add back to the pot and add the coconut milk.  Cook for 10 minutes.  When ready to serve, add the fresh lemon juice.  Enjoy!
